Birthday Cake

As we creep into mid January, I can’t help but be overly excited to have things to look forward to other than Spring. Sunday was my wonderful friend Valeria’s birthday, so in her honor I made these mini triple layer cakes. From wanting to try a few new things in the kitchen, to her birthday celebration, I had been counting down to the weekend more so than usual.

The recipe I followed for the cupcakes claimed to be the “best birthday cake recipe”, and I have to admit that it is my favorite so far. The cake wasn’t too sweet, but was instead the perfect pairing with the sugary frosting and sprinkles.

I saw one idea for these mini triple layer cakes on Pinterest that recommended baking the cake in washed out cans to create the cylindrical shape. Unfortunately, my attempt at this was a failure- the cake got stuck in the cans, which then created a frustrating game of trying to pry it out without ruining the shape…i.e. impossible. Instead, I had to go with my backup plan. After baking the rest of the batter on a cookie sheet, I used a circular cookie cutter to make the layers. So.much.easier.

In the end these came out even better than I had hoped- I am admittedly proud of myself. The weekend’s celebrations were a blast and these cupcakes ended up being a success. Is it Friday again yet?
